Mexico Chiapas El Jaguar

A solid, sturdy Mexican coffee, hitting all the notes one looks for: sweet chocolate up front, a pleasant nuttiness throughout, backed up with hints of raisin and dried apricot. This one is an all-around pleasant cup, full bodied but not too thick, sweet but not cloying, with just the right touch of bitterness.

Our El Jaguar coffee comes from a group of small producers in the town of Siltepec in central Chiapas. This strictly high grown coffee was produced under traditional farming methods, shade grown coffee, craft de-pulped, fermented, washed and sun dried.

The local population of Siltepec depends on agriculture for its livelihood, and coffee is at the heart of it. Siltepec’s coffee farms are enriched by the town’s proximity to the El Triunfo Biosphere Reserve. El Triunfo’s cloud forest is one of the most diverse areas for tree species in North and Central America. The forests act like a sponge, absorbing moisture from the rain and dense mist, thus providing nourishment to area farms.
